Manny started in the food service industry 24 years ago. He is a high-end food service banquet and catering chef. He has been with Scott Enterprises for 10 years and assumed the position of Executive Chef 5 years ago. Manny’s passion and love for cooking shows in the dishes he prepares. Manny has received various awards over his years and continues to raise the bar. Manny has loved working with The Ambassador since he walked in the door. He enjoys the closeness of the team and the friendly environment it provides. Manny possesses a true love and heart for cooking and it shows in every dish he prepares. Known for his creative and delicious menus for all the events The Ambassador hosts. There is no request Manny cannot provide for! In his free time, Manny enjoys fishing, spending time with his family and watching a great movie.

McKenzie joined the Scott Enterprises team in May of 2022, as the Sales Manager of the Hampton Inn & Suites Erie Bayfront. In February 2023, she was promoted to Corporate Sales Manager for Scott Enterprises. Most recently, in September 2024, was promoted to Senior Sales Manager for the Peek’n Peak Resort! McKenzie has had many different roles at Scott Enterprises since joining the team in 2022. From Sales Manager, to Corporate Sales Manager, to Convention / Associations Sales Manager, and now Senior Sales Manager!

McKenzie graduated with a degree in Hospitality Manager with a concentration in Event Management from Mercyhurst University in 2019.

She currently resides in Erie, PA with her husband, Christopher. When she is not working, she enjoys traveling to new destinations with her husband, golfing with friends at Lake Shore Country Club and spending time relaxing outside by their pool!

Melissa joined Scott Enterprises in 2024 as a senior Convention and Association Sales Manager. She brings over 20 years of hospitality sales experience and a passion for planning events with our clients. She currently resides in Erie, PA with her husband, Michael. When she’s not working, Melissa enjoys spending time at their camp in Tidioute with her friends & family. She also enjoys, hunting, gardening, and thrifting!

Lynn Denning is Scott Enterprises’ Corporate Director of Sales. Lynn’s career spans over 20 years in hospitality, with strong foundations in restaurant and banquet operations as well as in hotel sales. At North Park Clubhouse, she progressed from server and bartender to banquet manager. She then transitioned into conventions, serving as Exhibitor Service Manager at Monroeville Convention Center and later as Convention Service Manager at the affiliated DoubleTree Hotel, where she collaborated closely with clients to execute events of all sizes.

Her next move took her to Erie, where she joined Scott Enterprises’ Ambassador Conference Center as Catering Sales Manager, spearheading growth in its wedding business. Lynn later returned to operations, holding leadership roles including Director of Operations at Monroeville Convention Center, Food and Beverage Director across various Scott Enterprises properties, and General Manager of a Country Inn & Suites hotel.
She eventually returned to her passion for sales and currently serves as Corporate Director of Sales for Scott Enterprises, overseeing hotel sales teams across the portfolio.

Lynn attended La Roche College in Pennsylvania. Among her professional accomplishments she has received many Leader of the Quarter and Leader of the Year recognitions, a role in Sales Team of the Year for DoubleTree Hotels, a DoubleTree Hotels Spirit of Care nomination, and the Davidson Hotels Circle of Stars award. Lynn resides in Erie with her husband Ken and their dog Ella.
